Longjing Green Tea

This beautiful Chinese green tea is a classic, and when you try it you'll understand why. The leaves are picked in the spring, giving the tea a fresh green aroma, and processed with a characteristic pan-frying method that imparts a distinctive sweet chestnut flavour. It has very little bitterness and astringency, and just may change how you feel about green tea!
Like many Chinese teas, the name of this type of tea comes with a story- in ancient times, in the heart of tea-growing country, there was a village with a well at the center. For years, the town had suffered a drought, and tea production, their livelihood, had dried up. One day, a few villagers hiked up a nearby mountain to ask the advice of the monk that lived there. He told them that a dragon spirit lived in their well, and they should pray to it. So they prayed to the dragon, and very soon the rains returned, bringing with it this lovely green tea.

Steeping Instructions:

Gongfu style: 85°C water, 5g leaves per 100ml of water. 1st steep: 30 seconds, then add 10 seconds for each subsequent steep. 

Western style: 85°C water, >1g per 100ml of water (this is approx. 1 tablespoon for a large mug). 1st steep: 3 minutes, then add 1 minute for each subsequent steep.
